Magazine Salad

About the Recipe

Ingredients


  • One medium watermelon radish (or any vaiety of radish you prefer), chopped

  • Two English cucumbers, chopped

  • Twelve or so cherry tomatoes, halved

  • Shaved parmesaen cheese, about 1/4 cup

  • Handful of fresh cilantro

  • Handful of fresh basil

  • Extra virgin olive oil, 1/4 cup

  • Red wine vinegar, 1/3 cup

  • Juice of 1/2 small lemon, or one T of bottled lemon juice

  • Pinch of salt and pepper

Preparation

Step One

Thoroughly was radish, English cucumbers, tomatoes, and herbs.


Step Two

Chop all vegetables into uniform pieces, approximately one inch x one inch pieces.


Step Three

Using a vegetable peeler, shave strips of fresh parmesaen cheese.


Step Four

Make the vinaigrette. Add extra virgin olive oil, red wine vinegar, lemon juice and salt and pepper to a small jar or salad dressing cruet. Shake well to combine.


Step Five

Add chopped veg to your favorite salad bowl or platter. Top with fresh herbs and parm. Drizzle vinaigrette and toss.
